Strawberry Mint Tea

If you follow me on Twitter you will have heard my incessant talk about my strawberry mint tea making… I thought I would take a break in my regular scheduled wedding photo blog posts to talk about my favorite summer drink (well, my favorite is a homemade mojito but we may get to that later in the summer….) STRAWBERRY MINT SUN TEA!! Here we go!
Pick some mint from the garden. If you do not grow mint, you should. It is super easy to grow and you have a TON of it for the rest of the summer. If you need some- please ask me instead of buying it because it is taking over our garden right now! You will need about 10 sprigs. Throw it in a glass container. Always use glass containers when putting something in the sun!

Fill the glass container with cold water and add 4 tea bags (depending on the size of your container) I normally use 4-5 with a gallon size container. Add a handful of strawberries that are soft and squishy. Perfectly ripe strawberries do not do as well as strawberries that are past their prime. Like THIS OLD…. They are sweeter and softer when they are old :)

Let sit in the sun for the afternoon (or around 4 hours or so)
Add about a cup to two cups of sugar when the tea is still hot. The sugar blends better when the tea is still hot… or so my husband thinks anyway….
Take out the mint and the strawberries and pour into a glass and garnish with a fresh strawberry!! FYI the strawberries inside the tea taste terrible if you try and eat them, the sun and tea take all of the sweetness out of them!
Last step, fill up a glass for your kiddos and watch them happily suck it down  :) HAPPY SUMMER!!
